Healthy Pumpkin Spice Panna Cotta

This recipe was inspired from Chez Pim’s recipe and is a really refreshing dessert or snack with only a minimal amount of sugar coming from the raisins and a little agave. By adding the goodness of pumpkin this is a great treat that you don’t have to feel guilty about eating! This recipe is gluten free and Paleo diet friendly.

Ingredients (Makes approximately 6 servings)

  • 1 10g pouch unflavored gelatin
  • 1 can pureed organic unsweetened pumpkin
  • 1 cup light coconut milk
  • 1 ½ cups water
  • 1 tsp pumpkin pie spice
  • 3 tsp cinnamon
  • 1 tsp vanilla essence
  • 2 tbsp raw agave
  • Approx ¼ cup raisins
  • Cinnamon with raw sugar (for garnish)

Method

In a pot beat the gelatin powder into ½ cup water until smooth. Set the pot on to the stove on medium heat and add the rest of the ingredients into the pot. Slowly bring the ingredients to a boil while stirring continuously, approximately 5 minutes. You will start to see the mixture thickening. Remove from the stove and pour the mixture into single serving sized ramekins, ensuring that each ramekin gets some of the juicy raisins.  Sprinkle cinnamon sugar over the top of each to give a little extra sweetness at first bite and to give that brulee effect. Refrigerate for about 3 hours before serving.
