Ingredients: (Serves 2)
- 2 very ripe frozen bananas
- 1 tsp vanilla essence
- 1 tsp cinnamon powder
- 1 tbsp crunchy natural peanut butter
- Unsweetened vanilla almond milk
Break up the frozen banana into chunks and put into food processor or blender. Add in vanilla, cinnamon, peanut butter and pulse for a few beats to begin working into a paste. Add in a splash of almond milk (only a little required) and pulse again. If the blender is struggling too much then add in another splash of almond milk and blend until combined into thick, creamy paste. Place into a bowl and freeze for another 20 minutes, remove and scoop into 2 cups and enjoy with a shot of espresso (I love my Nespresso machine) or a rich black coffee.
