Chocolate Cherry Nut Mousse

Dairy-free, gluten-free and a Paleo Diet friendly recipe. Perhaps not low fat but packed full of excellent vitamins and minerals! A nutritious treat!  My food processor is not that good so it turned out a little mealy (although frankly still absolutely delicious) the better the blender the creamier this mousse will be.  I am going to buy a better processor soon and then plan to adapt this into some form of ice cream next – yum!

Ingredients:

  • ¼ cup sun dried cherries soaked in a little boiling water
  • ½ cup raw cashew pieces
  • ½ cup raw chopped pecans
  • ¼ cup organic good quality cocoa powder
  • Pinch of sea salt
  • 1 ripe banana
  • 1 tsp cinnamon
  • ¾ – 1 cup water

Method:

Add the ingredients into a blender with half of the water and pulse on high speed to combine. If too thick keep adding in some more water slowly and continue blending until a thick, smooth and creamy paste forms. Scoop out into individual serving sized ramekins and refrigerate for a few hours to set.
