I have recently moved to New York and just in time for summer fruits! Its peach season right now and they are deliciously sweet. The Gardening Channel states that peaches are high in beta carotene, an antioxidant that converts to Vitamin A, which is essential for healthy hearts and eyes. The darker the peach’s color, the more Vitamin A it has in its pulp. With one large peach containing approximately 46 calories and providing 2.2g of fiber they make a great low calorie snack or addition to salads or desserts.
I am very lazy when it comes to breakfast and like things to be of minimal hassle. This breakfast took me 5 minutes to prepare, the trick is to make a batch of quinoa in advance (follow the cooking directions on the side of the packet) and then microwave as needed. This breakfast is low in fat and has the bright flavours of summer in every mouthful!
Ingredients (Makes 1 serving)
- ½ yellow peach, pan fried flat side down
- ½ cup cooked quinoa
- 6 pecans, roughly crushed
- ¼ red apple, chopped
- Approx 3 tbsp Low fat natural unsweetened Greek yoghurt
- 1 tbsp honey
- Lime wedges to serve
Place to quinoa in the microwave for approximately 1 minute or less. Grill the peach, flat side down on a non stick pan for approximately 3 minutes or until warmed and caramalized. Meanwhile, chop the apple into bite sized pieces and slice a lime into wedges.
Stir the apple chunks into the quinoa and crumble the pecan peices on top. Arrange the sliced grilled peach on top then add a generous dollop of Greek natural yoghurt and a drizzle of honey. Squeeze fresh lime over the dish and enjoy!
