A healthy way to vary your oatmeal eating routine!
Ingredients (makes 3-4 breakfast servings)
- 10 heaped tablespoons gluten free rolled oats, pulsed in food processor (I like to keep it a bit chunky rather than using a flour)
- 2 whole eggs plus 2 egg whites
- 1 1/2 red apples, grated
- Approx. 4 tbsp 2% milk
- 1 tbsp grapeseed oil (coconut oil would also be great)
- Unsweetened cinnamon powder (I go pretty nuts with the stuff)
Mix all ingredients together to form a batter. Heat a large skillet over medium heat then using a tablespoon form individual pancakes on the pan. Make sure to not make them too thick as they will not cook properly in the centre. Once small bubbles begin to form flip and cook on the other side for about 2 minutes. These are excellent reheated so I make a big batch in the evening for breakfast for the next few days. Super tasty on their own or dusted with a little extra cinnamon powder and a drizzle of honey (this makes a great healthy dessert alternative too). Yum!
