- 3 medium carrots, sliced lengthways into ‘fry’ sized sticks
- Approx 1 tbsp coconut oil
- Ginger powder
- Salt and pepper
Preheat oven to 350F. Toss the cut carrot sticks in the coconut oil then spread out on a baking sheet and sprinkle with ginger powder, salt and pepper to taste. Bake in the oven for about 25 minutes or until golden. I served as a side to oven baked fish.
