Ginger Carrot Fries

The sweetness from the carrot is complemented by the ginger spice and hint of coconut flavor.

Ingredients

  • 3 medium carrots, sliced lengthways into ‘fry’ sized sticks
  • Approx 1 tbsp coconut oil
  • Ginger powder
  • Salt and pepper

Method

Preheat oven to 350F. Toss the cut carrot sticks in the coconut oil then spread out on a baking sheet and sprinkle with ginger powder, salt and pepper to taste. Bake in the oven for about 25 minutes or until golden. I served as a side to oven baked fish.
