These banana muffins are so ridiculously simple to make and they are ready in minutes! Make sure to use VERY ripe bananas in this recipe. My husband told me that these are the BOMB. To quote “as soon as I take my first bite into one I am already thinking about eating another one, they are so addictive”…. You have been warned!
Ingredients (makes 10-12 small muffins)
- 3 medium very ripe (black spotty) bananas
- 2 eggs
- 1/2 cup almond meal
- 1/4 cup golden flaxseed meal
- 1/4 cup shredded unsweetened coconut (I used Let’s Do Organic’s Reduced Fat Coconut)
- 1/4 cup coconut oil
- 1 tbsp coconut sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp vanilla extract
Preheat oven to 325F. Mash banana in a medium sized bowl. Add remaining ingredients and mix well until there are no more banana chunks and batter is smooth. It will be quite runny.
Pour batter into cups and bake in the oven for approximately 10 minutes. Allow to cool before eating. I sprinkled a little extra shredded coconut on top for a little extra coconut flavor.
