Cauliflower Pizza Margherita

Cauliflower Pizza I have been wanting to make cauliflower pizza for ages, thanks Kalyn’s Kitchen for the guidance! Apart from a bit of effort grinding up the cauliflower this was a really easy recipe to make and tasted delicious! Pretty darn close to the taste of regular pizza. The small amount of GF flour helps bind the crust ingredients a bit more effectively; you can just get away with picking the slices up with your hand if you cut them small and don’t overdo it with the topping ingredients.

Crust Ingredients

  • 1 heaping cup of finely grated cauliflower florets
  • 1/2 cup grated part skim mozzarella cheese
  • 2 tbsp gluten free flour (I used Bob’s Red Mill All Purpose GF Flour)
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 2 tbsp grated parmesan cheese
  • 1 egg, beaten
  • Salt and cracked pepper

Topping Ingredients 

  • Pizza sauce (buy one with no added sugar or preservatives)
  • Fresh basil
  • Fresh mozzarella cheese
  • Fresh vine ripened tomatoes
  • Chili flakes
  • Salt and cracked pepper
  • Parmesan cheese

Method

Preheat the oven to 450F.

Finely grate the cauliflower using a grater or a blender then microwave on high for approximately 4 minutes, until soft. Remove from microwave and stir in the rest of the crust ingredients until combined into thick paste.

Place non-stick baking paper on a baking sheet then scoop the dough out with your hands onto the baking sheet. Using fingertips work the dough into desired pizza shape, making the dough as thin as possible.

Bake in the oven for about 20 minutes, until crust is firm and golden.

Remove from oven, spread some pizza sauce over the base then add chili flakes, tomatoes, basil leaves, sliced mozzarella rounds then grate a little extra parmesan over the top along with a little extra salt and a generous amount of cracked pepper. Place back in the oven for another 5 or so minutes, until cheese is deliciously oozing.

Pick the pizza up using the baking sheet then slide onto a plate or wooden tray, slice and enjoy with a side salad of arugula and  finely sliced fennel!
